At my table

How I bring it to the table

A few things, done well, along the Via Emilia.

  • Hot, straight awayGnocco fritto comes to the table hot: you open it with your hands and fill it with cured meat.
  • Cured meats with a first and last nameProsciutto di Parma Riserva Piazza Peppino, Mortadella La Favola, Coppa di Langhirano: on the menu you find where every slice comes from.
  • For sharingThe Capriccio goes in the middle of the table: it is the first step of my journey along the Via Emilia.
  • Neither big nor smallGnocco fritto changes size from one province to the next, big in Parma, small in Bologna. Mine is in between.
